Ingredients
  

  • 1 lb boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1 cup quinoa
  • 2 cups chicken broth
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup kalamata olives, sliced
  • 1/4 cup crumbled feta cheese
  • 1/4 cup fresh parsley, chopped

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Rub the chicken breasts with 1 tablespoon olive oil, lemon juice, oregano, and garlic powder. Season with salt and pepper.
  3. Heat an ovenproof skillet over medium-high heat. Add the chicken and sear each side for 3–4 minutes until golden brown.
  4. Transfer the skillet to the oven and bake for 15–20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  5. Rinse the quinoa under cold water. Cook it in a medium saucepan with the chicken broth according to package instructions.
  6. Assemble the bowls by dividing the cooked quinoa, sliced chicken, cherry tomatoes, cucumber, olives, feta, and parsley evenly among four bowls.
  7. Drizzle with remaining olive oil before serving.
