Ingredients
  

  • 12 oz penne pasta
  • 1 lb boneless, skinless chicken breasts, cut into strips
  • 1 tbsp olive oil
  • 1 cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 tsp red pepper flakes
  • to taste salt and black pepper
  • 2 tbsp fresh basil, chopped

Method
 

  1. Cook the penne pasta according to package instructions, drain and set aside.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the chicken strips, season with salt and pepper, and cook until golden brown, about 5-7 minutes. Remove from the skillet and set aside.
  3. In the same skillet, add the sun-dried tomatoes and garlic, sauté until fragrant, about 1 minute.
  4. Reduce the heat to low, and stir in the heavy cream and Parmesan cheese, stirring until the cheese melts and the sauce thickens slightly.
  5. Return the chicken to the skillet and add the cooked pasta, tossing everything together to coat with the sauce. Adjust the seasoning with salt, black pepper, and red pepper flakes.
  6. Garnish with fresh basil before serving.
