Dark Chocolate Avocado Mint Freezer Fudge

I have a serious weakness for chocolate mint anything, but I don't always want the sugar crash that comes with traditional fudge. That's why I started experimenting with avocado as a base — and let me tell you, it works like magic. The avocado adds a silky, dense texture that mimics the creaminess of condensed milk, but without any dairy or refined sugar. The mint keeps it refreshing, and the dark chocolate makes it feel indulgent. I keep a batch in my freezer at all times for those after-dinner sweet cravings.

This recipe is stupidly easy: you blend everything in a food processor, spread it in a pan, and freeze. No cooking, no candy thermometer, no fuss. The result is a cool, melt-in-your-mouth fudge that's naturally sweetened with maple syrup and packed with healthy fats. It's the kind of dessert that feels naughty but totally fits into a balanced lifestyle. Plus, it's vegan, gluten-free, and paleo-friendly — so it works for almost any dietary preference.

Ingredients

  • 2 large ripe avocados, pitted and scooped
  • 1/2 cup coconut oil, melted
  • 1/2 cup unsweetened cocoa powder
  • 1/3 cup pure maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp peppermint extract
  • 1/4 tsp fine sea salt
  • 2 tbsp chopped dark chocolate (optional, for topping)

Method

  1. Line a 9×5-inch loaf pan with parchment paper, leaving overhang on the sides for easy removal.
  2. In a food processor, combine the avocado flesh, melted coconut oil, cocoa powder, maple syrup, vanilla extract, peppermint extract, and sea salt. Process until completely smooth, scraping down the sides as needed. Taste and adjust sweetness or mintiness.
  3. Pour the mixture into the prepared loaf pan and spread evenly with a spatula. Sprinkle chopped dark chocolate over the top if using.
  4. Freeze for at least 2 hours, or until firm. For best results, freeze overnight.
  5. Lift the fudge out of the pan using the parchment overhang. Cut into 12 squares. Serve straight from the freezer. Store in an airtight container in the freezer for up to 3 months.

Tips for Perfect Avocado Fudge

Use ripe but not overripe avocados. They should yield gently to pressure but not be mushy. Overripe avocados can make the fudge taste too grassy. Also, make sure your coconut oil is refined (not virgin) if you want zero coconut flavor competing with the mint. For the mint, I love using pure peppermint extract, but start with 1/4 teaspoon and adjust — a little goes a long way. If you want an extra minty kick, add a few drops of food-grade peppermint oil instead.

The fudge needs to set in the freezer for at least 2 hours, but overnight is even better. When you're ready to serve, let it sit at room temperature for 5 minutes so it softens slightly. You can also press chopped nuts, cacao nibs, or flaky sea salt into the top before freezing for extra texture. Store leftovers in an airtight container in the freezer for up to 3 months — if they last that long.
