Creamy Tuscan Salmon with Sun-Dried Tomatoes

Creamy Tuscan salmon is a restaurant-quality dinner that comes together in one skillet in about half an hour. Seared salmon fillets are nestled into a velvety sauce made with garlic, sun-dried tomatoes, baby spinach, and a touch of Parmesan. The flavors are rich, slightly tangy, and utterly comforting—perfect for a cozy weeknight or a special occasion.

This recipe works because the salmon is seared first to build a golden crust, then finished in the sauce so it stays moist and flaky. The sun-dried tomatoes add a sweet-tart punch, while the cream and cheese create a luscious texture that clings to every bite. Serve it with pasta, rice, or crusty bread to soak up every drop.

Ingredients

  • 4 fillets salmon (6 oz each), skin-on
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 3 cups baby spinach
  • 1/4 cup chopped fresh basil (optional)

Method

  1. Pat the salmon fillets dry with paper towels and season both sides with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Place the salmon fillets skin-side down and cook for 4-5 minutes until the skin is crispy and the fish easily releases from the pan. Flip and cook for another 2-3 minutes. Transfer to a plate and set aside.
  3. Reduce heat to medium. In the same skillet, add the minced garlic and chopped sun-dried tomatoes. Sauté for 1 minute until fragrant.
  4. Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan until melted and the sauce slightly thickens, about 2 minutes.
  5. Add the baby spinach and cook until wilted, about 1-2 minutes. Season with additional salt and pepper to taste.
  6. Return the salmon fillets to the skillet, nestling them into the sauce. Simmer for 2-3 minutes to heat through. Garnish with fresh basil if desired.
  7. Serve immediately with pasta, rice, or crusty bread.

Tips for Success

Use skin-on salmon fillets if you can—the skin helps insulate the fish and prevents it from drying out. Pat the fillets completely dry before searing to get a good crust. If you prefer a lighter sauce, substitute half-and-half for the heavy cream, but keep in mind it may not thicken as well.

For a flavor twist, add a pinch of red pepper flakes or a squeeze of fresh lemon juice at the end. Fresh basil or parsley makes a great garnish. This dish is best served immediately, but leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Reheat gently on the stove with a splash of water or milk to loosen the sauce.
