Ingredients
  

  • 1 1/2 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 1 small onion, finely diced
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, sliced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup freshly grated Parmesan cheese
  • 1 tsp dried Italian herbs
  • 1 pinch red pepper flakes
  • to taste salt and freshly ground pepper
  • 2 tbsp fresh basil, chopped

Method
 

  1. Heat olive oil in a large skillet over medium-high heat. Add shrimp and cook for 2 minutes on each side until pink and opaque. Remove shrimp from skillet and set aside.
  2. In the same skillet, add onion and garlic. Sauté for 3 minutes until onions are translucent.
  3. Add sun-dried tomatoes, and stir for 1 minute. Pour in heavy cream and chicken broth, stirring until combined.
  4. Stir in Parmesan cheese, Italian herbs, and red pepper flakes. Simmer for 5 minutes until the sauce thickens slightly.
  5. Return shrimp to the skillet, tossing to coat in the sauce. Season with salt and pepper. Cook for an additional 2 minutes.
  6. Garnish with fresh basil before serving. Enjoy with your choice of pasta or bread.
