Growing up, mangoes were a household favorite, always bringing a burst of sunshine into our kitchen. This chilled Mango Coconut Chia Parfait is now one of my go-to desserts for a refreshing treat.

What makes this recipe stand out is the delightful combination of creamy coconut milk paired with ripe mango chunks, all tied together by nutrient-packed chia seeds. It's not often that a dessert can boast both incredible flavor and wholesome ingredients.

Ingredients
  

  • 1 cup full-fat coconut milk
  • 1/4 cup chia seeds
  • 2 tablespoons honey or maple syrup
  • 1 ripe mango, peeled and diced
  • 1 teaspoon vanilla extract
  • 1 tablespoon toasted coconut flakes (optional)

Method
 

  1. In a medium bowl, whisk together coconut milk, chia seeds, honey, and vanilla extract until well combined.
  2. Cover the bowl and refrigerate for at least 4 hours or overnight, allowing the chia seeds to expand and the mixture to thicken.
  3. Once the chia pudding is set, stir it to ensure even consistency.
  4. Layer the chia pudding and diced mango cubes into serving glasses, alternating between the two.
  5. Top each parfait with a sprinkle of toasted coconut flakes before serving, if desired.
