High-Protein Shrimp & Edamame Stir-Fry

When I need a fast dinner that doesn't skimp on protein, this shrimp and edamame stir-fry is my go-to. It's ready in about 25 minutes, uses one skillet, and delivers a whopping 40 grams of protein per serving—without any protein powder or weird ingredients.

The secret? A double dose of protein from shrimp and shelled edamame, plus a sticky, savory sauce that clings to every bite. Serve it over rice, cauliflower rice, or just on its own for a low-carb option.

Ingredients
  

  • 1 lb large shrimp, peeled and deveined
  • 1 cup frozen shelled edamame, thawed
  • 1 tbsp vegetable oil
  • 1 tbsp sesame oil
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp cornstarch
  • 2 tbsp water
  • 2 whole green onions, sliced (white and green parts separated)
  • 1 tsp sesame seeds, for garnish
  • Cooked rice or cauliflower rice, for serving (optional)

Method
 

  1. In a small bowl, whisk together soy sauce, honey, rice vinegar, cornstarch, and water. Set aside.
  2. Heat vegetable oil and sesame oil in a large skillet or wok over medium-high heat until shimmering.
  3. Add shrimp in a single layer and cook for 1-2 minutes per side until pink and opaque. Remove shrimp to a plate.
  4. Add garlic, ginger, and white parts of green onions to the skillet. Stir-fry for 30 seconds until fragrant.
  5. Add edamame and cook for 2 minutes, stirring occasionally.
  6. Return shrimp to the skillet, pour in the sauce, and toss everything together. Cook for 1-2 minutes until sauce thickens and coats the shrimp and edamame.
  7. Remove from heat, garnish with green onion tops and sesame seeds. Serve immediately over rice if desired.

Tips for Success

Pat the shrimp completely dry before cooking—moisture is the enemy of a good sear. Also, have all ingredients prepped and ready because stir-frying goes fast.
