Ingredients
  

  • 1 cup brown lentils, rinsed
  • 2 cups diced mushrooms
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can crushed tomatoes (28 oz)
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup grated Parmesan cheese (optional)

Method
 

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, and sauté until the onion becomes translucent, about 5 minutes.
  2. Add mushrooms and cook for another 8 minutes until they release their moisture and begin to brown.
  3. Stir in lentils, crushed tomatoes, basil, salt, and pepper. Bring to a simmer.
  4. Reduce heat to low, cover, and cook for 25-30 minutes until the lentils are tender, stirring occasionally.
  5. Adjust seasoning as needed. Serve over your choice of pasta and top with grated Parmesan cheese if desired.
