Crispy Air Fryer Eggplant Parmesan

- Slice the eggplant into 1/2-inch rounds and pat dry with a paper towel.
- Set up a breading station with three shallow bowls: flour in the first, beaten eggs in the second, and a mixture of breadcrumbs, Parmesan cheese, and Italian seasoning in the third.
- Dredge each eggplant slice in flour, dip in egg, and coat with the breadcrumb mixture.
- Preheat air fryer to 375°F. Spray the air fryer basket and both sides of breaded eggplant slices with olive oil.
- Place eggplant slices in the air fryer basket in a single layer and cook for 10 minutes, flipping halfway through.
- Top each slice with marinara sauce and mozzarella cheese, then return to the air fryer for an additional 3-5 minutes or until cheese is bubbly.
