Crispy Air Fryer Zucchini Fries

When I first got my air fryer, I was on a mission to recreate all my favorite crispy snacks without the extra oil. That's how I stumbled upon these zucchini fries, and they’ve been a staple ever since.

Using an air fryer gives these zucchini fries an irresistible crunch, while keeping them light and healthier than traditional fries. They're the perfect side dish or an afternoon snack that even the kids will love.

Ingredients
  

  • 2 medium zucchinis
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried Italian seasoning
  • 1/2 tsp garlic powder
  • 1 egg
  • 1 tbsp water
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil spray

Method
 

  1. Slice the zucchinis into strips about 3 inches long and 1/2 inch thick.
  2. In a shallow bowl, combine breadcrumbs, Parmesan cheese, Italian seasoning, garlic powder, salt, and black pepper.
  3. In another bowl, whisk together the egg and water.
  4. Dip zucchini strips in the egg mixture, then coat with the breadcrumb mixture, pressing gently to adhere.
  5. Lightly spray air fryer basket with olive oil spray. Arrange zucchini fries in a single layer, being careful not to overcrowd.
  6. Air fry at 400°F for 10-12 minutes, turning halfway through, until golden brown.

Tips for Perfect Zucchini Fries
