Ingredients
  

  • 2 lbs boneless skinless chicken breasts pounded to even thickness
  • 1 cup dill pickle juice
  • 1 cup all-purpose flour
  • 2 large eggs beaten
  • 1 cup panko breadcrumbs
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 brioche hamburger buns toasted

Method
 

  1. Place chicken breasts in a shallow dish and pour pickle juice over them. Marinate for at least 15 minutes or up to 2 hours in the refrigerator.
  2. Set up three shallow bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs mixed with paprika, garlic powder, salt, and pepper.
  3. Remove chicken from pickle juice and pat dry. Dredge each piece in flour, dip in egg, then coat thoroughly with seasoned panko breadcrumbs, pressing to adhere.
  4. Preheat air fryer to 375°F for 3-5 minutes. Spray the basket with cooking spray.
  5. Place breaded chicken in a single layer in the air fryer basket. Spray tops with cooking spray. Cook for 10-12 minutes, flipping halfway through, until golden brown and internal temperature reaches 165°F.
  6. During the last 2 minutes of cooking, place buns cut-side down in the air fryer to toast.
  7. Place cooked chicken on toasted buns and add desired toppings such as pickles, lettuce, tomato, and mayonnaise. Serve immediately.

Notes

For extra crispy chicken, spray the breaded chicken generously with cooking spray before air frying. Don't overcrowd the air fryer basket - cook in batches if needed to ensure even crisping. If chicken breasts are thick, pound them to 1/2-inch thickness for even cooking and faster prep time.
