Ingredients

  • 3 cups Greek yogurt plain or vanilla
  • 3 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries sliced
  • 1/2 cup fresh blueberries
  • 1/2 cup granola
  • 2 tablespoons dark chocolate chips
  • 2 tablespoons sliced almonds

Method

  1. Line a large baking sheet with parchment paper or a silicone baking mat. Set aside.
  2. In a medium bowl, combine the Greek yogurt, honey, and vanilla extract. Stir until smooth and well combined.
  3. Pour the yogurt mixture onto the prepared baking sheet. Use a spatula to spread it evenly into a rectangle about 1/4 inch thick.
  4. Scatter the sliced strawberries, blueberries, granola, chocolate chips, and sliced almonds evenly over the yogurt layer. Gently press them down slightly so they stick.
  5. Place the baking sheet in the freezer and freeze for at least 3 hours or until completely solid.
  6. Remove from the freezer and let sit for 2-3 minutes. Break or cut the frozen yogurt bark into irregular pieces.
  7. Serve immediately or store the pieces in an airtight container in the freezer for up to 2 weeks.

Notes

Use full-fat Greek yogurt for the creamiest texture. You can customize the toppings with your favorite fruits, nuts, or seeds. Let the bark sit at room temperature for a few minutes before breaking to prevent shattering.
