Ingredients
  

  • 2 cups milk of choice dairy or non-dairy
  • 2 shots espresso or 1/2 cup strong brewed coffee
  • 1 medium ripe banana mashed
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon vanilla extract
  • 1/8 teaspoon ground nutmeg
  • 1 pinch sea salt
  • 1 tablespoon chopped walnuts optional, for topping

Method
 

  1. In a small saucepan, combine the mashed banana, maple syrup, cinnamon, nutmeg, vanilla extract, and sea salt. Mix well until smooth.
  2. Add the milk to the saucepan with the banana mixture. Heat over medium heat, whisking constantly, until the mixture is hot and steaming but not boiling, about 3-4 minutes.
  3. Transfer the hot milk mixture to a blender and blend on high speed for 30-45 seconds until smooth and frothy. Alternatively, use an immersion blender or milk frother.
  4. While the milk is heating, prepare 2 shots of espresso or brew 1/2 cup of strong coffee.
  5. Divide the espresso between two mugs. Pour the blended banana milk mixture over the espresso and stir gently to combine.
  6. Top with a sprinkle of cinnamon and chopped walnuts if desired. Serve immediately while hot.

Notes

For the best flavor, use a very ripe banana with brown spots as it will be sweeter and blend more smoothly.
