Ingredients
  

  • 2 pints cherry tomatoes
  • 8 ounces feta cheese block
  • 1/2 cup olive oil
  • 4 cloves garlic minced
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 12 ounces pasta penne or rigatoni
  • 1/4 cup fresh basil chopped

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Place the feta cheese block in the center of a 9x13 inch baking dish. Arrange cherry tomatoes around the feta. Drizzle everything with olive oil and sprinkle with minced garlic, red pepper flakes, salt, and black pepper.
  3. Bake for 30-35 minutes until the tomatoes burst and the feta is golden and soft.
  4. While the feta and tomatoes are baking, cook pasta according to package directions until al dente. Reserve 1 cup of pasta water before draining.
  5. Remove the baking dish from the oven and immediately add the cooked pasta. Use a fork to mash and mix the feta and tomatoes into a creamy sauce, tossing with the pasta.
  6. Add reserved pasta water a little at a time if needed to reach desired sauce consistency.
  7. Stir in fresh basil and serve immediately while hot.

Notes

Use a good quality block feta cheese for best results - pre-crumbled feta won't melt properly. You can add fresh spinach or arugula when tossing the pasta for extra nutrition. This dish reheats well but may need a splash of water or olive oil to loosen the sauce.
