Ingredients
Method
- Preheat your oven to 400°F (200°C).
- In a 9x13 inch baking dish, add the cherry tomatoes, olive oil, garlic, red pepper flakes, salt, and black pepper. Toss everything together to coat the tomatoes evenly.
- Place the block of feta cheese in the center of the baking dish, nestled among the tomatoes. Drizzle a little extra olive oil over the feta block.
- Bake in the preheated oven for 30-35 minutes, until the tomatoes have burst and the feta is soft and golden on top.
- While the feta and tomatoes are baking, cook the pasta according to package directions until al dente. Reserve 1 cup of pasta water before draining.
- Remove the baking dish from the oven and immediately stir everything together, breaking up the feta and mixing it with the tomatoes to create a creamy sauce. Add the cooked pasta and toss to combine, adding reserved pasta water as needed to reach desired consistency.
- Stir in the fresh basil, taste and adjust seasoning if needed. Serve immediately while hot.

Notes
Use a block of feta cheese rather than crumbled for the best creamy texture. Don't skip reserving pasta water - it helps create a silky sauce. For extra flavor, add a splash of balsamic vinegar or lemon juice before serving.
