Ingredients
  

  • 2 cups cooked birria beef shredded
  • 1 cup birria consomé reserved from cooking
  • 8 flour tortillas medium size
  • 3 cups Oaxaca cheese shredded, or mozzarella
  • 1 cup Monterey Jack cheese shredded
  • 1/2 cup white onion finely diced
  • 1/4 cup fresh cilantro chopped
  • 2 tablespoons vegetable oil for cooking
  • 1 lime cut into wedges

Method
 

  1. Heat the birria consomé in a shallow bowl. Dip one side of each tortilla briefly into the consomé to lightly coat it with the flavorful oil and broth.
  2. On the consomé-dipped side of each tortilla, add a layer of shredded Oaxaca and Monterey Jack cheese on half of the tortilla. Top with shredded birria beef, diced onion, and cilantro.
  3. Fold the tortilla in half to create a half-moon shape, pressing gently to seal. Repeat with remaining tortillas.
  4. Heat a large skillet or griddle over medium-high heat and add a thin layer of oil. Place 2-3 quesadillas in the pan and cook for 3-4 minutes per side until golden brown and crispy, and the cheese is melted.
  5. Transfer cooked quesadillas to a plate and keep warm. Repeat with remaining quesadillas, adding more oil as needed.
  6. Heat the remaining birria consomé in a small pot until hot and steaming.
  7. Cut each quesadilla in half and serve immediately with warm consomé for dipping, lime wedges, extra onion, and cilantro on the side.

Notes

Don't oversoak the tortillas in consomé or they'll become too soggy. Use a combination of cheeses for the best melting quality and flavor. If you don't have pre-made birria, you can use leftover pot roast or slow-cooked beef with beef broth for dipping.
