Preheat your oven to 450°F (232°C) and place a muffin pan in the oven to heat.
In a large bowl, whisk together the flour and salt. In a separate bowl, mix the milk, eggs, melted butter, and honey until smooth.
Gradually add the wet ingredients to the dry ingredients, whisking until the batter is smooth and slightly thinner than pancake batter.
Remove the hot muffin pan from the oven and generously grease it with butter. Quickly pour the batter evenly into the cups, filling each about halfway.
Bake in the preheated oven for 15 minutes, then reduce the temperature to 350°F (177°C) and continue baking for an additional 10-12 minutes until puffed and golden brown.
Immediately remove the popovers from the pan and serve warm. Drizzle with additional honey if desired.
