Ingredients
  

For the Celery Juice
  • 1 bunch organic celery about 9-12 stalks
  • 1/2 cup water or more, as needed
  • 1/2 inch fresh ginger optional, for added flavor
  • 1/2 lemon juice optional, for freshness

Method
 

  1. Thoroughly wash the celery stalks. Trim the ends and cut the stalks into 1-inch pieces. If using ginger, peel and chop it.
  2. Place the chopped celery (and ginger, if using) into a high-speed blender. Add 1/2 cup of water. Blend on high until completely smooth, adding more water a tablespoon at a time if needed to help the blades move.
  3. Place a nut milk bag, fine-mesh sieve lined with cheesecloth, or a clean kitchen towel over a large bowl. Pour the blended celery mixture into the bag/sieve.
  4. Gather the edges of the bag/cloth and squeeze firmly to extract all the liquid into the bowl. Discard the pulp, or save it for another use (e.g., composting, adding to soups).
  5. Stir in the fresh lemon juice, if using. Pour the celery juice into a glass and serve immediately. For best results, drink on an empty stomach.

Notes
