In a large bowl, combine flour, yeast, sugar, and warm water. Mix until a loose dough forms.
Add salt and olive oil to the dough and knead for about 5 minutes until smooth and elastic. Let it rise for 1 hour or until doubled in size.
Preheat oven to 400°F (200°C). Grease a 9x13 inch baking pan with olive oil. Gently press the risen dough into the pan.
Sprinkle the dough with dried Italian herbs, Parmesan cheese, mozzarella cheese, and coarse sea salt.
Bake for 20-25 minutes, until the focaccia is golden brown and the cheese is bubbly.
Remove from oven and let cool in the pan for 5 minutes before transferring to a wire rack. Serve warm or at room temperature.
