- Preheat your oven to 450 degrees Fahrenheit. If using a pizza stone, place it in the oven while preheating.
- Roll out the pizza dough on a lightly floured surface to your desired thickness, about 12 inches in diameter. Transfer to a parchment-lined baking sheet or pizza peel.
- In a medium bowl, mix the cottage cheese with minced garlic, dried oregano, salt, and black pepper until well combined.
- Brush the pizza dough with olive oil. Spread the cottage cheese mixture evenly over the dough, leaving a small border for the crust. Sprinkle the chopped spinach over the cottage cheese, then arrange the tomato slices on top. Finish with shredded mozzarella cheese and red pepper flakes if using.
- Transfer the pizza to the preheated oven and bake for 18-20 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
- Remove the pizza from the oven and let it cool for 2-3 minutes. Drizzle with a little extra olive oil if desired, slice, and serve hot.
