- In a large bowl, combine the drained black beans, black-eyed peas, corn, diced red bell pepper, green bell pepper, and red onion.
- In a small bowl, whisk together the lime juice, olive oil, salt, black pepper, and cumin until well combined.
- Pour the vinaigrette over the bean and vegetable mixture and toss gently to coat everything evenly.
- Gently fold in the diced avocados and chopped cilantro, being careful not to mash the avocados.
- Cover and refrigerate for at least 30 minutes to allow flavors to meld. Serve chilled with tortilla chips or as a side dish.

For best results, add the avocado just before serving to prevent browning. This dish tastes even better after sitting for a few hours or overnight as the flavors develop. Cowboy caviar can also be served as a salad over greens or as a topping for grilled chicken or fish.
