Ingredients
  

  • 1 can black beans 15 oz, drained and rinsed
  • 1 can black-eyed peas 15 oz, drained and rinsed
  • 1.5 cups corn kernels fresh or frozen and thawed
  • 1 medium red bell pepper diced
  • 1 medium green bell pepper diced
  • 1 medium red onion finely diced
  • 2 medium avocados diced
  • 1/4 cup fresh cilantro chopped
  • 3 tablespoons lime juice freshly squeezed
  • 3 tablespoons olive oil
  • 1 teaspoon salt or to taste
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cumin

Method
 

  1. In a large bowl, combine the drained black beans, black-eyed peas, corn, diced red bell pepper, green bell pepper, and red onion.
  2. In a small bowl, whisk together the lime juice, olive oil, salt, black pepper, and cumin until well combined.
  3. Pour the vinaigrette over the bean and vegetable mixture and toss gently to coat everything evenly.
  4. Gently fold in the diced avocados and chopped cilantro, being careful not to mash the avocados.
  5. Cover and refrigerate for at least 30 minutes to allow flavors to meld. Serve chilled with tortilla chips or as a side dish.

Notes

For best results, add the avocado just before serving to prevent browning. This dish tastes even better after sitting for a few hours or overnight as the flavors develop. Cowboy caviar can also be served as a salad over greens or as a topping for grilled chicken or fish.
