Crispy Air Fryer Buffalo Cauliflower Bites

Ingredients
  

  • 1 head cauliflower, cut into bite-sized florets
  • 1/2 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup milk (or unsweetened almond milk)
  • 1/4 cup buffalo sauce (such as Frank's RedHot)
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon honey (optional, to balance heat)
  • 1/4 cup ranch or blue cheese dressing, for serving
  • 2 stalks celery, cut into sticks (optional)

Method
 

  1. Preheat air fryer to 380°F (190°C) for 5 minutes.
  2. In a large bowl, whisk together flour, cornstarch, garlic powder, smoked paprika, salt, and pepper. Add milk and stir until a thick batter forms. Add cauliflower florets and toss gently to coat evenly.
  3. Lightly spray the air fryer basket with cooking spray. Arrange half the cauliflower in a single layer, leaving space between pieces. Air fry at 380°F for 12-15 minutes, shaking the basket halfway through, until golden and crispy. Repeat with remaining cauliflower.
  4. While cauliflower cooks, make the buffalo sauce: In a small bowl, whisk together buffalo sauce, melted butter, and honey (if using).
  5. Transfer hot cauliflower to a large bowl, drizzle with buffalo sauce, and toss gently to coat.
  6. Return coated cauliflower to the air fryer and air fry at 400°F for 3-5 minutes, until sauce is glazed and edges are charred in spots.
  7. Serve immediately with ranch or blue cheese dressing and celery sticks, if desired.
