Method
- Place the gummy bears in a large bowl or container with a lid. Make sure they are spread out evenly.
- Pour the lemon-lime soda over the gummy bears until they are completely covered. Add lemon juice, honey, and vanilla extract if using. Stir gently to combine.
- Cover the container and refrigerate for 2-3 hours or overnight. The gummy bears will absorb the soda and expand to about double their original size.
- After soaking, drain any excess soda from the gummy bears using a fine mesh strainer. Pat them gently with a paper towel if needed.
- Spread the soaked gummy bears in a single layer on a parchment-lined baking sheet. Place in the freezer for at least 2-3 hours until completely frozen.
- Once frozen, transfer the gummy bears to a serving bowl. Garnish with chopped fresh mint leaves if desired. Serve immediately and enjoy the icy, fizzy treat.
- Store any leftover frozen gummy bears in an airtight container or freezer bag in the freezer for up to 2 weeks.

Notes
For best results, use sugar-free soda and gelatin-based gummy bears for a healthier option. Experiment with different soda flavors like orange, grape, or cola to create unique flavor combinations. Make sure to freeze the gummy bears in a single layer first to prevent them from sticking together.
