In a large bowl, combine the warm water, honey, and yeast. Let it sit for 5 minutes until the yeast is foamy.
Add the flour, oats, salt, and melted butter to the yeast mixture. Stir until a dough forms.
Transfer the dough onto a floured surface and knead for about 8-10 minutes until the dough is smooth and elastic.
Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
Preheat your oven to 375°F (190°C). Punch down the dough and shape it into a loaf. Place it into a greased loaf pan.
Cover again and let it rise for another 30 minutes. Bake for 30-35 minutes, or until the bread sounds hollow when tapped on the bottom.
