Egg Salad Avocado Toast
  • 4 hard-boiled eggs peeled and chopped
  • 1 ripe avocado mashed
  • 2 tbsp mayonnaise
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 4 slices whole-wheat bread toasted
  • 1 tbsp fresh chives chopped, for garnish
  • 1/2 tsp red pepper flakes optional, for garnish

Method
 

  1. In a medium bowl, combine the chopped hard-boiled eggs, mashed avocado, mayonnaise, salt, and black pepper. Mix well until everything is evenly combined and creamy.
  2. Toast the whole-wheat bread slices to your desired crispness.
  3. Evenly spread the egg salad mixture over each slice of toasted bread.
  4. Garnish with fresh chopped chives and a sprinkle of red pepper flakes, if desired. Serve immediately.
