  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups buttermilk
  • 1/4 cup unsalted butter melted and cooled
  • 1 large egg
  • 1 teaspoon vanilla extract

Method
 

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In a separate medium bowl, whisk together the buttermilk, melted butter, egg, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients. Stir just until combined; the batter should be lumpy. Do not overmix.
  4. Heat a lightly oiled griddle or large non-stick skillet over medium heat. Pour about 1/4 cup of batter per pancake onto the griddle.
  5. Cook for 2-3 minutes per side, or until golden brown and cooked through. Serve immediately with your favorite toppings.
