Ingredients
  

  • 4 salmon fillets 6 oz each, skin-on or skinless
  • 4 tablespoons butter melted
  • 4 cloves garlic minced
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup panko breadcrumbs
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika optional

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Pat salmon fillets dry with paper towels and place them on the prepared baking sheet. Season with salt and pepper.
  3. In a small bowl, combine melted butter, minced garlic, and lemon juice. Brush half of this mixture over the salmon fillets.
  4. In another bowl, mix together Parmesan cheese, panko breadcrumbs, parsley, and paprika. Add the remaining garlic butter and stir until combined.
  5. Press the Parmesan breadcrumb mixture evenly over the top of each salmon fillet, creating a thick crust.
  6. Bake for 12-15 minutes, or until the salmon flakes easily with a fork and the crust is golden brown. Internal temperature should reach 145°F.
  7. Remove from oven and let rest for 2 minutes. Serve immediately with lemon wedges and extra parsley if desired.

Notes

For extra crispy crust, broil for the last 1-2 minutes of cooking, watching carefully to prevent burning. Choose salmon fillets of similar thickness for even cooking. Fresh salmon works best, but if using frozen, thaw completely and pat very dry before seasoning.
