  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup feta cheese crumbled
  • 2 tbsp fresh dill chopped
  • 1 tbsp fresh mint chopped
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp black pepper
  • 1/2 tsp salt
  • 1 egg large

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. In a large mixing bowl, combine the ground chicken, breadcrumbs, crumbled feta cheese, chopped fresh dill, chopped fresh mint, garlic powder, onion powder, salt, black pepper, and egg. Mix gently until just combined. Overmixing can make the meatballs tough.
  3. Using your hands, roll the mixture into 1-inch (2.5 cm) meatballs. Place them in a single layer on the prepared baking sheet.
  4. Bake for 18-20 minutes, or until the meatballs are cooked through and lightly golden brown. The internal temperature should reach 165°F (74°C).
  5. Remove from the oven and serve hot. These meatballs are great with a side of tzatziki, a Greek salad, or over rice.

Notes

For extra flavor, you can add a pinch of dried oregano to the meatball mixture. If you don't have fresh herbs, use 1 teaspoon of dried dill and 1/2 teaspoon of dried mint. These meatballs freeze well; simply cool completely, then store in an airtight container for up to 3 months, reheating in the oven or microwave.
