Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 packet active dry yeast
  • 1 cup warm water (110°F)
  • 1 tsp sugar
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp chopped fresh herbs (thyme, parsley, chives)
  • 2 tbsp melted butter

Method

  1. In a bowl, mix warm water, yeast, and sugar. Let it sit until frothy, about 5 minutes.
  2. Add flour, olive oil, and salt to the yeast mixture. Knead until a soft dough forms. Cover and let rise in a warm place for 1 hour or until doubled.
  3. Preheat oven to 375°F (190°C). Roll dough on a floured surface to a rectangle, about 1/2-inch thick.
  4. Sprinkle mozzarella, Parmesan, and herbs evenly over the dough. Roll tightly from the long side and cut into 1-inch slices.
  5. Arrange slices in a greased loaf pan. Brush with melted butter. Let rise for another 20 minutes.
  6. Bake in preheated oven for 25-30 minutes, until golden brown and cheese is bubbly. Let cool slightly before serving.
