  • 1/2 cup powdered sugar, plus more for rolling
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup finely chopped pecans
  • 1/4 teaspoon salt

Method
 

  1. Cream the softened butter and powdered sugar until light and fluffy. Mix in the vanilla extract.
  2. Whisk together flour and salt, then gradually mix into the butter mixture. Fold in the chopped pecans.
  3. Chill the dough for at least 30 minutes.
  4. Roll dough into 1-inch balls and bake at 375°F (190°C) for 12–15 minutes until lightly golden on the bottom.
  5. While warm, roll cookies in powdered sugar. Cool completely and roll again if desired.
