Method
- Cream the softened butter and powdered sugar until light and fluffy. Mix in the vanilla extract.
- Whisk together flour and salt, then gradually mix into the butter mixture. Fold in the chopped pecans.
- Chill the dough for at least 30 minutes.
- Roll dough into 1-inch balls and bake at 375°F (190°C) for 12–15 minutes until lightly golden on the bottom.
- While warm, roll cookies in powdered sugar. Cool completely and roll again if desired.
