- In a small bowl, combine honey, red pepper flakes, lemon juice, and black pepper. Stir well and set aside to let the flavors infuse while you cook the halloumi.

- Heat olive oil in a large non-stick skillet over medium-high heat until shimmering but not smoking.
- Place halloumi slices in the hot pan in a single layer. Cook for 2-3 minutes on each side until golden brown and crispy on the outside. Do not move them around while cooking to achieve a good crust.
- Transfer the cooked halloumi to a serving plate immediately while still hot.
- Generously drizzle the hot honey mixture over the warm halloumi slices. Sprinkle with fresh thyme leaves if using and chopped parsley.
