Ingredients
  

Iced Tea Base
  • 4 cups water
  • 3 bags black tea or 3 teaspoons loose leaf black tea
Passion Fruit Mixture
  • 1 cup passion fruit pulp from about 6-8 passion fruits
  • 1/4 cup honey or maple syrup, adjust to taste
  • 1 tablespoon fresh lime juice
For Serving
  • 4 cups ice cubes
  • 4 slices lime for garnish
  • 4 sprigs mint for garnish

Method
 

  1. Bring 4 cups of water to a boil. Remove from heat and add the black tea bags (or loose leaf tea in an infuser). Steep for 3-5 minutes, or until desired strength is reached. Remove tea bags/infuser and let the tea cool completely.
  2. While the tea cools, scoop the pulp from the fresh passion fruits into a small bowl. Stir in the honey (or maple syrup) and fresh lime juice. Mix well until the sweetener is dissolved.
  3. Once the tea is completely cooled, pour it into a large pitcher. Add the passion fruit mixture and stir thoroughly to combine all ingredients.
  4. Refrigerate the iced tea for at least 1 hour to allow the flavors to meld and to ensure it's well chilled.
  5. Fill glasses with ice cubes. Pour the passion fruit iced tea over the ice. Garnish each serving with a slice of lime and a sprig of fresh mint before serving.

Notes

For a smoother iced tea, you can strain the passion fruit pulp through a fine-mesh sieve after mixing with honey and lime, discarding the seeds. Adjust the amount of honey or other sweetener to your personal preference; some passion fruits are sweeter than others. This recipe can be easily doubled or tripled for larger gatherings.
