Method
- Bring 4 cups of water to a boil. Remove from heat and add the black tea bags (or loose leaf tea in an infuser). Steep for 3-5 minutes, or until desired strength is reached. Remove tea bags/infuser and let the tea cool completely.
- While the tea cools, scoop the pulp from the fresh passion fruits into a small bowl. Stir in the honey (or maple syrup) and fresh lime juice. Mix well until the sweetener is dissolved.
- Once the tea is completely cooled, pour it into a large pitcher. Add the passion fruit mixture and stir thoroughly to combine all ingredients.
- Refrigerate the iced tea for at least 1 hour to allow the flavors to meld and to ensure it's well chilled.
- Fill glasses with ice cubes. Pour the passion fruit iced tea over the ice. Garnish each serving with a slice of lime and a sprig of fresh mint before serving.

Notes
For a smoother iced tea, you can strain the passion fruit pulp through a fine-mesh sieve after mixing with honey and lime, discarding the seeds. Adjust the amount of honey or other sweetener to your personal preference; some passion fruits are sweeter than others. This recipe can be easily doubled or tripled for larger gatherings.
