Quick Lemon Basil Orzo with Chicken

Ingredients
  

  • 1 lb boneless skinless chicken breast, cubed
  • 2 tablespoons olive oil
  • 3 cups chicken broth
  • 1 1/2 cups orzo
  • 1 cup fresh basil leaves, chopped
  • 1 large lemon, zested and juiced
  • 2 cloves garlic, minced
  • 1/2 cup Parmesan cheese, grated
  • to taste salt and pepper

Method
 

  1. Heat the olive oil in a large skillet over medium heat. Season the cubed chicken with salt and pepper and sauté until golden brown and cooked through, about 6-8 minutes. Remove from skillet and set aside.
  2. In the same skillet, add the minced garlic and cook until fragrant, about 1 minute.
  3. Add the chicken broth and bring to a simmer. Stir in the orzo and cook for 8-10 minutes until the orzo is tender and most of the liquid is absorbed.
  4. Return the chicken to the skillet and mix in the lemon zest, lemon juice, and chopped basil. Cook for an additional 2 minutes.
  5. Remove from heat and stir in the grated Parmesan cheese. Adjust seasoning with salt and pepper to taste.
  6. Serve immediately, garnished with additional basil leaves and lemon wedges if desired.
