Ingredients

  • 1 cup fresh raspberries
  • 2 medium lemons juiced
  • 4 cups sparkling water chilled
  • 1 cup ice cubes
  • 8 whole fresh mint leaves optional
  • 4 slices lemon slices for garnish
  • 12 whole extra raspberries for garnish

Method

  1. In a large pitcher, gently muddle the fresh raspberries with a muddler or the back of a wooden spoon to release their juices.
  2. Pour the freshly squeezed lemon juice into the pitcher with the muddled raspberries and stir to combine.
  3. Fill the pitcher with ice cubes to keep the drink cold and refreshing.
  4. Slowly pour the chilled sparkling water into the pitcher, stirring gently to avoid losing carbonation.
  5. If using, tear the mint leaves slightly to release their aroma and add them to the pitcher.
  6. Pour into individual glasses and garnish each with a lemon slice and a few fresh raspberries. Serve immediately.

Notes

For best results, use very cold sparkling water to maintain maximum fizz. You can prepare the raspberry-lemon mixture ahead of time and add the sparkling water just before serving. If you prefer a sweeter drink, add a touch of honey or stevia to taste.
