Ingredients
  

  • 3 medium ripe bananas mashed
  • 1/3 cup coconut oil melted
  • 1/2 cup honey or maple syrup
  • 2 large eggs beaten
  • 1/4 cup unsweetened cocoa powder
  • 1 3/4 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup dark chocolate chips optional

Method
 

  1. Preheat your oven to 350 degrees Fahrenheit. Grease a 9x5 inch loaf pan with coconut oil or line it with parchment paper.
  2. In a large mixing bowl, mash the ripe bananas with a fork until smooth. Stir in the melted coconut oil, honey, and beaten eggs until well combined.
  3. In a separate bowl, whisk together the cocoa powder, whole wheat flour, baking soda, and salt until evenly distributed.
  4. Add the dry ingredients to the wet ingredients and gently fold together using a spatula until just combined. Do not overmix. Fold in chocolate chips if using.
  5. Pour the batter into the prepared loaf pan and spread evenly. Bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean.
  6. Remove from oven and let the banana bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes
