Simple Dumpling Lasagna Using Wonton Wrappers

Ingredients
  

  • 1 pound ground pork or ground chicken
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese divided
  • 1 cup grated Parmesan cheese
  • 24 wonton wrappers
  • 2 cups marinara sauce
  • 2 cloves garlic minced
  • 1 large egg beaten
  • 2 tablespoons fresh basil chopped

Method
 

  1. Preheat oven to 375 degrees F. Lightly grease a 9x13 inch baking dish with cooking spray.
  2. In a large skillet over medium heat, cook ground pork and minced garlic until meat is browned and cooked through, about 6-8 minutes. Drain excess fat and stir in marinara sauce. Set aside.
  3. In a medium bowl, combine ricotta cheese, 1 cup mozzarella cheese, Parmesan cheese, beaten egg, and chopped basil. Mix until well combined.
  4. Spread a thin layer of meat sauce on the bottom of prepared baking dish. Arrange 8 wonton wrappers over sauce, overlapping slightly. Spread half of the cheese mixture over wrappers, then top with one-third of remaining meat sauce.
  5. Repeat layering with 8 more wonton wrappers, remaining cheese mixture, and half of remaining meat sauce. Top with final 8 wonton wrappers and remaining meat sauce.
  6. Sprinkle remaining 1 cup mozzarella cheese over top. Cover with aluminum foil and bake for 25 minutes. Remove foil and bake an additional 10 minutes until cheese is melted and bubbly.
  7. Let lasagna rest for 10 minutes before slicing. Garnish with additional fresh basil if desired and serve warm.

Notes

Keep wonton wrappers covered with a damp towel while assembling to prevent them from drying out. You can substitute ground beef or turkey for the pork if preferred. This lasagna can be assembled up to 24 hours ahead and refrigerated before baking - just add 10 extra minutes to the covered baking time if starting from cold.
