Ingredients

Dough
  • 1 cup warm milk 105-115°F
  • 2 1/4 teaspoons active dry yeast
  • 1/4 cup granulated sugar
  • 1 large egg room temperature
  • 1/4 cup unsalted butter melted and cooled
  • 3 cups all-purpose flour plus more for dusting
  • 1 teaspoon salt
Butter Topping
  • 2 tablespoons unsalted butter melted

Method

  1. In a large bowl, combine warm milk, yeast, and 1 tablespoon of sugar. Stir gently and let sit for 5-10 minutes until foamy.
  2. Add the remaining sugar, egg, melted butter, flour, and salt to the yeast mixture. Mix until a shaggy dough forms, then knead on a lightly floured surface for 5-7 minutes until smooth and elastic.
  3. Place the dough in a lightly oiled bowl, cover with plastic wrap, and let rise in a warm place for 60-90 minutes, or until doubled in size.
  4. Gently punch down the dough and divide it into 12 equal pieces. Shape each piece into a smooth ball and arrange them in a greased 9x13 inch baking dish.
  5. Cover the baking dish and let the rolls rise again for 30-45 minutes, or until puffy.
  6. Preheat oven to 375°F (190°C). Bake for 15-20 minutes, or until golden brown. Brush with melted butter immediately after removing from the oven.

Notes

Ensure your milk is not too hot, as it can kill the yeast. A temperature between 105-115°F (40-46°C) is ideal. For a richer flavor, you can brush the rolls with an egg wash (1 egg beaten with 1 tbsp water) before baking. Don't overbake; the rolls should be lightly golden and feel soft to the touch.
