Ingredients

  • 1 lb ground turkey
  • 1 15 oz can chickpeas, drained and rinsed
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 1 14.5 oz can diced tomatoes, with juice
  • 1 tablespoon tomato paste
  • 1/4 cup fresh cilantro, chopped
  • to taste salt and pepper

Method

  1. Heat olive oil in a large skillet over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent, about 3-4 minutes.
  2. Add the ground turkey to the skillet, breaking it apart as it cooks. Continue cooking until the turkey is browned and cooked through, about 6-8 minutes.
  3. Stir in the chickpeas, ground cumin, smoked paprika, cayenne pepper, salt, and pepper. Cook for another 2 minutes until the spices are fragrant.
  4. Pour in the diced tomatoes with their juice and tomato paste. Stir to combine, then bring to a simmer and cook for 10 minutes, allowing the flavors to meld.
  5. Remove from heat and stir in the chopped cilantro. Taste and adjust seasoning if necessary.
  6. Serve warm, garnished with additional cilantro if desired.
