  • 8 ounces feta cheese crumbled
  • 4 ounces cream cheese softened
  • 2 tablespoons olive oil plus more for drizzling
  • 1 tablespoon lemon juice
  • 1/4 teaspoon black pepper
  • 1 pinch red pepper flakes optional
  • Fresh herbs for garnish, e.g., parsley, mint

Method
 

  1. In a food processor, combine the crumbled feta cheese, softened cream cheese, olive oil, lemon juice, and black pepper. Add red pepper flakes if desired.
  2. Process on high until the mixture is completely smooth and creamy, scraping down the sides of the bowl as needed. This usually takes about 2-3 minutes.
  3. Taste the dip and adjust seasonings if necessary. You might want a little more lemon juice for brightness or pepper.
  4. Transfer the whipped feta dip to a serving bowl. Drizzle with a little extra olive oil and garnish with fresh herbs if desired.
  5. Serve immediately with pita bread, fresh vegetables, crackers, or as part of a mezze platter.
