Quick Lemon Basil Orzo with Chicken

When life gets busy, a meal that is both quick and satisfying is a treasure. My Quick Lemon Basil Orzo with Chicken is inspired by my love for Mediterranean flavors and my need for simple weeknight dinners. This dish combines the fresh taste of basil and lemon with tender chicken and hearty orzo for a delightful dinner you can whip up without fuss.

This recipe works because it harnesses the power of fresh basil and lemon zest to brighten up a classic orzo dish. The chicken is sautéed to perfection, providing protein that beautifully complements the nutty flavor of the orzo. In just about 40 minutes, you can have a delectable meal that's both comforting and invigorating.

Ingredients

  • 1 lb boneless skinless chicken breast, cubed
  • 2 tablespoons olive oil
  • 3 cups chicken broth
  • 1 1/2 cups orzo
  • 1 cup fresh basil leaves, chopped
  • 1 large lemon, zested and juiced
  • 2 cloves garlic, minced
  • 1/2 cup Parmesan cheese, grated
  • to taste salt and pepper

Method

  1. Heat the olive oil in a large skillet over medium heat. Season the cubed chicken with salt and pepper and sauté until golden brown and cooked through, about 6-8 minutes. Remove from skillet and set aside.
  2. In the same skillet, add the minced garlic and cook until fragrant, about 1 minute.
  3. Add the chicken broth and bring to a simmer. Stir in the orzo and cook for 8-10 minutes until the orzo is tender and most of the liquid is absorbed.
  4. Return the chicken to the skillet and mix in the lemon zest, lemon juice, and chopped basil. Cook for an additional 2 minutes.
  5. Remove from heat and stir in the grated Parmesan cheese. Adjust seasoning with salt and pepper to taste.
  6. Serve immediately, garnished with additional basil leaves and lemon wedges if desired.

Why You'll Love This Recipe

The beauty of this Lemon Basil Orzo with Chicken is in its simplicity. If you're short on fresh basil, a teaspoon of dried basil can substitute, but the fresh leaves do make a remarkable difference. For a creamier texture, consider adding a spoonful of mascarpone cheese to the finished dish.

A few toasted pine nuts sprinkled on top can add a delightful crunch and deepen the Mediterranean vibe of the dish. Pair it with a simple arugula salad for a complete meal that hits all the right notes.
