Ingredients
  

  • 2 cups cottage cheese full-fat works best
  • 2 large eggs
  • 1.5 cups shredded mozzarella cheese divided
  • 0.5 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Method
 

  1. Preheat oven to 375 degrees Fahrenheit. Line a large baking sheet or pizza pan with parchment paper and lightly spray with cooking spray.
  2. In a food processor or blender, combine cottage cheese, eggs, 1 cup mozzarella cheese, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper. Blend until smooth and well combined.
  3. Pour the mixture onto the prepared baking sheet and spread into a circle about 10-12 inches in diameter, keeping the edges slightly thicker than the center.
  4. Bake for 20-25 minutes until the crust is golden brown and set in the center. The edges should be crispy and slightly darker.
  5. Remove from oven and add your favorite pizza sauce, remaining mozzarella cheese, and desired toppings.
  6. Return to oven and bake for an additional 8-10 minutes until cheese is melted and bubbly.
  7. Let cool for 3-5 minutes before slicing. Cut into 8 slices and serve immediately.

Notes
