Ingredients
  

  • 2 tablespoons vegetable oil
  • 3 cups broccoli florets
  • 2 medium carrots sliced
  • 1 medium bell pepper any color, sliced
  • 1 cup snap peas trimmed
  • 3 cloves garlic minced
  • 3 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 1/4 cup water

Method
 

  1. In a small bowl, whisk together soy sauce, cornstarch, and water until smooth. Set aside.
  2. Heat vegetable oil in a large wok or skillet over high heat until shimmering.
  3. Add broccoli and carrots to the hot wok. Stir fry for 3-4 minutes until slightly tender but still crisp.
  4. Add bell pepper, snap peas, and minced garlic. Continue stir frying for another 2-3 minutes, stirring constantly.
  5. Pour the prepared sauce over the vegetables and toss everything together until well coated.
  6. Cook for 1-2 more minutes until the sauce thickens and coats the vegetables evenly.
  7. Remove from heat and serve immediately over rice or noodles if desired.
