Lemon Herb Grilled Chicken Breasts

Ingredients
  

  • 1 1/2 lbs boneless skinless chicken breasts
  • 1/4 cup olive oil
  • 2 tbsp lemon juice (freshly squeezed)
  • 1 tbsp lemon zest
  • 3 cloves garlic (minced)
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Method
 

  1. In a medium bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, basil, salt, and pepper to create the marinade.
  2. Place chicken breasts in a large resealable plastic bag. Pour in the marinade, seal the bag, and refrigerate for at least 2 hours, or overnight for best results.
  3. Preheat your grill to medium-high heat. Remove chicken from the marinade and allow excess marinade to drip off.
  4. Grill chicken on direct heat, cooking for approximately 6-7 minutes on each side, or until the internal temperature reaches 165°F.
  5. Once done, let the chicken rest for a few minutes before slicing. Serve with your choice of sides.
